This Saturday, November 15, chef Séverine Pailhès offers you a menu inspired by the know-how of Japanese cuisine.
This menu is particularly inspired by the work of the producers she met during her last trip to Japan. But also in the products that are around us: local organic soy, homemade fermentations, vegetables from our market gardeners, small-scale fishing fish from Grau du Roi... It is not for her to identically reproduce Japanese cooking techniques. Rather try, simply and humbly, to be inspired by flavors, textures, ingredients and know-how to make you discover the complexity of this cuisine so rich and subtle, in search of the famous flavor "umami"...
