Gimont is a bastide founded in 1265 by the Cistercian monks of Planselve.

Gimont has become a stronghold of foie gras not only thanks to the world-famous canneries such as Comtesse du Barry and the Dukes of Gascogne but also thanks to the success of its markets in fat and the "Grasse Matinée" from Sunday from November to the end of March.
