Gimont is a bastide founded in 1265 by the Cistercian monks of Planselve.
Dominated by its 14th century church, the city of Gimont is full of many places to discover.
The church Notre Dame du Gimontois, work of the Cistercians and Gothic type is to be visited and discovered during your journey in Gimont. At its entrance is the sculpture representing the Assumption of the Virgin. Its sculptor, Antonin Carlès, was born in Gimont. A street bears his name. The church organ, created in 1172 by Godefroy Schidt, was classified as a Historical Monument in 1775. The church of Gimont is also recognized for its stained glass windows.
In the heart of the bastide of Gimont, come and enjoy the market on Wednesday morning and Sunday morning under the central hall. Also, at the site of the current La Poste, there was, before, the grain hall. In the streets of Gimont, you will be able to see the house of Guillaume Ader, a famous poet and doctor from Gimontois as well as the house of Arceau, belonging to the representative of the count of Toulouse.
The Cantonal Museum of Archaeology and Paleontology is to be discovered under the Gimont Hall. It is open on request. Guided tours are organized at 05 62 67 71 66.
Other places are to be discovered such as the esplanade des Capucins, which was previously an ancient citadel, will allow you today to enjoy a quiet moment with the possibility of dining. Also, leaving Gimont, you can discover the Chapel of Cahuzac, listed as a Historical Monument since 2017. You will also be able to the abbey of Planselve, which is private but nevertheless part of the heritage of Gimont.

Gimont has become the stronghold of foie gras, not only thanks to world-famous canneries such as the Comtesse du Barry and the Dukes of Gascony but also thanks to the success of its markets in fat and the famous ‘Grasse Matinée from Sunday from November to the end of March.
